Nikkei cuisine was born from the encounter between Japanese tradition and the boldness of Peruvian cooking.
Its flavor is the result of the story of Japanese migrants who, upon arriving in Peru, reinterpreted their culinary heritage with the ingredients, flavors and emotions of the new land.
Today, this unique fusion has spread across the world, giving shape to a contemporary Latin cuisine that blends freshness, spice and umami or savory flavor, into creative dishes, a unique and personal gastronomic experience. Nikkei cuisine is identity, migration and evolution, combined with creativity and intuition.

Our cuisine is based in Japanese precision: meticulous cuts, carefully crafted tempura with an aesthetic touch, and a wok that, which is always hot and transforms simple vegetables into something more complex: a deep respect for the product.
We work with fresh fish, raw or marinated, preserving its texture, flavor and nutritional value. We seek balance and clarity in every dish, without excess, allowing each ingredient and technique speak for themselves.

That’s why we embrace what’s local, using Mediterranean ingredients and valuing their freshness, origin and seasonality.
We aim to highlight the natural richness of this region, reinterpreted through Nikkei lens and spirit but with a Chilean twist.
We cook to talk about the land, to honor what grows nearby and to continue writing a story of fusion, respect, and innovation.

THE AUTHOR'S SOUL OF OUR KITCHEN
My passion for cooking was born in my teenage years, although my relationship with it began much earlier. I spent my summers in my grandmother’s restaurant in Chile, where my mother helped out, and I — almost without realizing it — discovered the magic of a kitchen in motion. At 16, I started washing dishes, then preparing my own, and from that moment, I knew this was my path.
I studied Culinary Management in Chile while working to learn from every experience. My curiosity led me to Peruvian cuisine, which captivated me with its flavors and history, and later to Peru itself, where I discovered the richness of its gastronomy and the Nikkei cuisine — which today is my greatest inspiration.
In Santiago, I had the opportunity to work for two years at Karai, the Nikkei restaurant at the W Hotel, led by Chef Micha Mitsuharu Tsumura, creator of the acclaimed Maido in Lima, considered one of the best restaurants in the world. That experience allowed me to develop my creativity and deepen my understanding of the essence of Nikkei cuisine — a style that is constantly evolving.
For me, cooking is an act of creation and shared joy: transforming what the land and sea offer into dishes that convey emotion, tradition, and surprise. My dream has always been that cooking not only nourishes, but also inspires and builds community.
